Rocky Road provides the perfect afternoon pick me up on a cold, dark winter’s day. With no baking involved, Rocky Road is so quick and easy to make when you have little time to spare.
They also make great Christmas gifts when cut into squares, placed in a cellophane bag or pretty box and tied with a bow. You can find the recipe below.
200g dark chocolate
130g unsalted butter
3 tbsp golden syrup
100g mini marshmallows
icing sugar for dusting
Start by melting together the chocolate, golden syrup and butter over a ban-marie.
Meanwhile, line a small baking tray with baking paper.
Place the biscuits (I used chocolate chip digestives but you can use any type you like) in a freezer bag and crush into small pieces.
Let the melted mixture cool for a while before adding the biscuits, marshmallows, malteasers and raisins. You can use any dry ingredients you like and change the quantities depending on what texture you want to achieve.
Stir together and tip into the lined baking tray.
Leave to cool until set and then cut into squares.
