For the first time since I started work, I had a day off today! My company is moving office so we were given the day off and I took the opportunity to escape to Somerset for a long weekend.
We’re putting up the decorations this weekend and it’s the Christmas market in Frome on Sunday so I thought I’d get into the festive spirit by baking some Christmas cupcakes.
When Chloe and I went to the Ideal Home Show at Christmas a couple of weeks ago, we came across the Happy Cupcake Company and their range of adorable sprinkles. We went a bit crazy and bought three packets of sprinkles each, including these miniature minty candy canes I used to decorate red velvet cupcakes.
The rich colour and flavour of red velvet with its deep red vanilla cake topped with white cream cheese frosting, has Christmas written all over it. Being their bestselling flavour, I followed the recipe by Hummingbird bakery. Hummingbird recipes haven’t always worked for me in the past, prompting me to surmise that they were deliberately tweaked to make you give up and buy their cakes!
However, the red velvet recipe worked really well and the sprinkles made them extra pretty and very Christmassy. I’m now feeling suitably festive for the weekend ahead.
